In this decaffeination technique, raw green coffee beans are soaked in near-boiling water and exposed to high pressure and steam, creating a concentrated solution. The concentrate is then removed from the beans, and in a separate, indirect process, a solvent is added to isolate the caffeine from the original green coffee components. This mixture is then pasteurized to eliminate any residual solvents. Finally, the extract, which retains the original green coffee properties without caffeine, is reintroduced to the decaffeinated coffee beans. The American Decaf method removes between 98% to 99.5% of caffeine from each batch of coffee.

Meet Sandra Trochez, an exceptional coffee producer based in Santa Barbara, Honduras. Sandra has an inspiring story. In 2019 she took over the coffee farm (known as Don Amado) after her husband, Amado Fernandez passed away. Amado was a 3rd generation coffee producer whose father gifted him a plot of land to establish his own farm in 2006. Together, Amado and Sandra won Cup of Excellence in 2010. This accomplishment enabled the two to connect with coffee buyers which offers sustainability. Today Sandra runs Don Amado with her oldest son and brothers-in-law. Together they’re producing incredible coffee that would make Amado proud. We are incredibly excited to partner with Sandra. It’s a relationship we will continue to foster moving forward.

Ninga washing station is located by the Nkokoma river in the Kayanza Province. Before this washing station was opened, producers were forced to travel far and wide to reach a washing station, especially one that paid fair prices. Ninga washing station works with Giku Hill, Bumba Hill and Ninga Hill. We’re stoked to share this coffee with you and hope you enjoy it as much as we do!

Juan Contreras is a coffee producer who owns a small farm in Santa Barbara, Honduras. He grew up in coffee thanks to his dad who owned a big farm. When he was 23, his father gifted him a farm where he continues to build his name and reputation. For the last 5 years Juan has significantly develop his craft and works directly with our exporting partner who supports him with milling and specialty farming practices.
